Lead Butcher/Operations Manager

Reporting to the owner, the Lead Butcher/Operations Manager will be responsible for overseeing the daily operations of the meat department, ensuring high standards of product quality, food safety, customer service, and team performance, as well as supervising butchers and meat cutters, managing inventory, coordinating with suppliers, and ensuring compliance with health and safety regulations.
Essential Responsiblities
Supervise and coordinate the activities of butchers, meat cutters, and support staff.
Oversee cutting, trimming, deboning, grinding, and packaging of meat products to meet quality and customer specifications.
Train and mentor staff on proper butchering techniques, food safety standards, and equipment use.
Monitor and maintain inventory levels, place orders, and manage product rotation to reduce waste.
Inspect meat products for freshness, quality, and compliance with food safety regulations.
Ensure proper sanitation of tools, equipment, and work areas.
Handle customer inquiries, special orders, and complaints in a professional manner.
Enforce workplace health and safety rules and ensure staff follow OSHA and food handling guidelines.
Assist with scheduling, payroll input, and performance evaluations of team members.
Collaborate with management to develop promotions, pricing strategies, and product displays.
Essential Qualifications
Previous experience as a butcher or meat cutter (supervisory experience preferred).
Strong knowledge of meat preparation, cutting techniques, and food safety regulations.
Ability to lead, train, and motivate a team.
Strong organizational and time management skills.
Excellent communication and customer service skills.
Basic computer literacy for inventory and scheduling systems.
Physical stamina and the ability to work in cold environments and lift heavy products.
