Rushing Waters Fisheries raises premium quality Rainbow Trout on an 80-acre farm in Palmyra, WI. In addition to raising premium quality trout, Rushing Waters has an FDA/HACCP certified production facility that is run by a passionate team. Our pledge for quality has inspired a delicious line of value-added seafood products including but not limited to hot smoked fish, spreads, crab cakes and salmon burgers.
Summary of Position
The Fish Cutter is responsible for properly filleting, boning, and dressing rainbow trout ensuring maximum use and yield of the product. The cutter will meet required productivity, quality, and safety expectations as determined by the supervisor. In addition to cutting, the employee will be responsible for assisting with salmon burger production, salmon brining, and other seafood processing.
Responsibilities
- Cut, trim, process, and clean rainbow trout according to company standards.
- Operate knives, mixers, fish boning equipment, and burger production equipment as needed.
- Maintain a clean work area and equipment to ensure the highest standards of sanitation and food safety.
- Handle product properly to ensure maximum shelf life, sanitation, and product quality.
- Conform to all relevant HACCP, SQF, and company food safety standards.
- Conduct operations in a way that promotes employee and food safety.
- Clean up the work station and department at the end of the shift.
- Meet all expectations for production and quality as established by the supervisor.
- Perform other duties as assigned.
Qualifications
- Food processing and/or sanitation experience is preferred.
- Ability to work independently and as a team at a quick efficient pace.
- Must be able to lift and move at least 50 pounds or more.
- Ability to be in refrigerated cooler for up to 1 hour at a time
- Comfortable standing and working on concrete surface for up to 8 hours per day
