G.LION Hawaii is seeking a seasoned and service-driven Food & Beverage Manager to support our restaurant operations at the Ritz-Carlton Residences Waikiki and Hy’s Steak House. This role is central to upholding the level of hospitality, culinary quality, and guest care that define our group. You will oversee daily front-of-house operations, guide and develop our service teams, partner closely with our culinary leadership, and ensure that every guest experiences the genuine aloha and elevated standards expected across our properties. Duties
Lead and manage daily F&B operations across multiple service styles, ensuring smooth, efficient, and consistent execution.
Oversee service and presentation standards in collaboration with culinary and bar teams, maintaining Ritz-Carlton and G.LION quality expectations.
Manage inventory processes including ordering, vendor coordination, stock rotation, and waste reduction to support cost controls.
Use Micros Simphony POS to support accurate sales processing, menu updates, reporting, and operational analysis.
Ensure cash-handling practices and end-of-shift reconciliations are completed accurately.
Recruit, train, and develop service staff with a focus on hospitality fundamentals, menu knowledge, beverage education, and company SOPs.
Maintain full compliance with all food safety, sanitation, and health regulations across all outlets.
Coordinate with chefs, banquets, and events teams on production schedules, private dining, group bookings, and specialty activations.
Oversee team scheduling, performance reviews, coaching, and hiring processes to maintain high morale and accountability.
Drive guest satisfaction through elevated tableside execution, personalized service, and proactive recovery when needed.
Support budgeting and cost-management initiatives to meet financial targets while maintaining exceptional guest experiences.
Experience
Proven leadership experience in luxury, fine-dining, or high-volume hospitality settings.
Strong background in service management with working knowledge of culinary operations and beverage programs.
Hands-on experience with Micros Simphony or similar POS platforms including reporting and menu management.
Demonstrated success managing and motivating front-of-house teams in fast-paced environments.
Thorough understanding of food safety requirements, sanitation practices, and health regulations.
Experience with inventory control, vendor ordering, and cost-management strategies.
Track record of training and staff development with an emphasis on consistency and elevated guest engagement.
Familiarity with budgeting principles and operational planning within a multi-outlet hospitality setting.
Experience in private dining, luxury events, or banquet coordination is strongly preferred.
