Job Overview
Lone Pine Abattoir is seeking an experienced Head Butcher to lead day-to-day cutting, fabrication, and packaging operations in a small USDA-inspected facility. This is a hands-on leadership role responsible for whole-animal breakdown, quality control, and training staff while maintaining food safety and humane handling standards.
Key Responsibilities
- Lead and perform whole-animal fabrication (carcass breakdown, primals, sub-primals)
- Oversee and assist with packaging, labeling, and order accuracy
- Ensure compliance with USDA inspection requirements, HACCP, and sanitation
- Train and supervise a small processing team
- Maintain high standards for yield, quality, and consistency
- Safely operate knives, saws, grinders, and processing equipment
- Enforce workplace safety and PPE use
- Assist with cooler organization and product flow
Required Qualifications
- Proven 3+ years experience as a butcher or meat cutter with whole-animal processing
- Experience in a USDA-inspected or state-inspected facility
- Strong knife skills and knowledge of meat anatomy
- Ability to lead by example in a hands-on role
- Comfortable working in cold environments and lifting up to 75 lbs
Preferred
- Prior supervisory or lead butcher experience
- HACCP and/or food safety training
- Experience in meat processing plants
Schedule & Environment
- Full-time
- Physically demanding, cold/wet processing environment
- PPE required at all times
Pay: $22.00 - $28.00 per hour
